Spinach Quiche
This quiche is great for breakfast, brunch or a reception. Easy and delicious.

  1. Prick pie crust bottom and sides and prebake crust at 350 degrees for 8-10 minutes or just until dough is set but crust has not begun to brown.
  2. Saute the spinach in 1 tablespoon of butter in a skillet until dry.
  3. Saute the onions in the remaining 2 tablespoons butter in a small skillet until soft. Add to the spinach.
  4. Add seasonings. Cook out all liquid.
  5. Whisk together eggs and heavy cream in a bowl.
  6. Add the spinach mixture to the egg mixture, combine well. Pour into the cooled pie shell.
  7. Bake at 350 degrees for 30 minutes or until the quiche is firm.
