Spinach Quiche

This quiche is great for breakfast, brunch or a reception. Easy and delicious.

Ingredients
- 1 deep dish pie crust
- 1 10 ounce package frozen chopped spinach
- 3 tablespoons butter
- 3 tablespoons finely chopped green onions
- 3/4 teaspoon Salt
- Dash pepper
- Pinch nutmeg
- 4 Eggs
- 2 Cups heavy cream
Instructions

Prick pie crust bottom and sides and prebake crust at 350 degrees for 8-10 minutes or just until dough is set but crust has not begun to brown.

Saute the spinach in 1 tablespoon of butter in a skillet until dry.
- 3.
Saute the onions in the remaining 2 tablespoons butter in a small skillet until soft. Add to the spinach.

Add seasonings. Cook out all liquid.
- 5.
Whisk together eggs and heavy cream in a bowl.
- 6.
Add the spinach mixture to the egg mixture, combine well. Pour into the cooled pie shell.
- 7.
Bake at 350 degrees for 30 minutes or until the quiche is firm.
